VANESSIE OF SANTA FE, 434 W. San Francisco St. Cited for moderate-risk violation for lack of chlorine test strips (corrected), lack of thermometers (corrected). Cited for low-risk violation for peeling and stained kitchen hallway walls, greasy exhaust hood filters.

LOS MAYAS, 409 W. Water St. Previous violations corrected. New citations for high-risk violations for boxes of beer stored in employee restroom (corrected), filthy cutting boards, non-working sink in employee restroom. Cited for moderate-risk violation for opening underneath back door. Cited for low-risk violation for peeling ceiling above cleaned dishes.

El PAISANO, 3140 Cerrillos Road. Cited for high-risk violations for hand-wash sink used to store food container and dirty utensils, bare-hand contact with lettuce on sandwich, raw meat improperly stored close to ready-to-eat foods, oven cleaner in food-prep area, improper food temperatures (corrected). Cited for moderate-risk violations for all food thermometers not calibrated or broken, lack of thermometers. Cited for low-risk violations for improperly stored utensils.

WOOD GORMLEY ELEMENTARY, 141 E. Booth St. Cited for moderate-risk violation for sanitizer solution placed in wrong sink.

INN AND SPA AT LORETTO, 211 Old Santa Fe Trail. Cited for moderate-risk violation for lack of enough food thermometers. Cited for low-risk violation for greasy exhaust hood filters. Inspector described operation as "still one of the cleanest kitchens in Santa Fe!"

THE NILE CAFE, 559 W. Cordova Road. Cited for moderate-risk violations for lack of thermometer to monitor cold food temperatures, no chlorine test strips, windows not screened, uncovered outdoor garbage can. Cited for low-risk violation for unprotected single-serve utensils, permit not posted.

INDIA HOUSE, 2501 Cerrillos Road. Cited for high-risk violations for bare-hand contact with cooked chicken (corrected), two buffet items not protected, window cleaner kept in food storage area, ready-to-eat food items not dated. Cited for moderate-risk violations for some surfaces not cleaned, no thermometer in refrigerator and front desk, barewood surfaces in food storage and prep area. Cited for low-risk violations for not easily viewed permit, plates and utensils not stored protected, peeling paint on ceiling near vent hood, dust on ceiling vent, inadequate light in cooler and freezer.
